Made from 10-25 kg line-cought giant cod resulting in a richer and deeper taste.
Hand processed (hand filleted).
Salted according to the old tradition, not spray salted. Only first class salt used graded with Codex Standard for Food Grade Salt 150 – 1985.
Preserved in salt for up to six months according to the traditional method.
